First brewed in 2018, Subtropic is the first hazy IPA we brewed where we were like, holy shit, people are going to love this.
Almost famously we didn’t brew an IPA for the first few years of existence. Call it naivety, call it ego, call it dumb, but anyway, we were making other styles of beer and outside of a couple cheeky collabs with Dageraad (who also famously didn’t make an IPA) we didn’t really dry hop anything.
Then 2017 hit and we decided we needed a full time IPA in our lineup. So, we went on a bit of a run brewing an IPA every month, refining our techniques in order to get our perfect version of an S&O IPA. Subtropic was one of our favourites throughout that process.
Dry-hopped heavily with Galaxy and rounded out with Mosaic, Subtropic has notes of peach, papaya, guava, oranges, it’s basically a tropical fruit salad sitting on top of a body with plenty of fluffy oats, pilsner and spelt malt. Subtropic finishes exactly the way we think a hazy IPA should, juicy, soft, with a touch of bitterness as at S&O we don’t really love anything that’s cloyingly sweet.
