A S&O x Dageraad x Small Gods x Whistle Buoy Collaboration
We got together with our friends from Dageraad, Small Gods and Whistle Buoy and wanted to make a brewer’s beer. Something easy drinking yet full flavoured. Something that seems simple yet doesn’t have much to hide behind. Sure, the big 10+% imperial stouts loaded with adjuncts are easy to hype up, but we wanted to make something we’re hyped about brewing and drinking.
Our friends from the island brought along some malt from Field 5 Farm, some Heritage Winter Barley which we used with British Maris Otter and a touch of Rye Malt as a base. Flaked barley is used to give a creamy mouthfeel and roasted barley and a hint of chocolate malt add the dry roastiness.
We took inspiration from the most famous brewer of a dry irish stout by taking a portion of the mash and souring it overnight before adding it back into the kettle. All this extra work for just a little “twang”, a little “je ne sais quoi” that adds depth and subtle complexity.
Along with a traditional English hop (EKG), we also added a little Sabro to the whirlpool for a whisper of coconut.
Easy drinking but never boring. Starts rich and full and ends with a dry, roasty finish with a whisper of sourness. Cocoa, coffee, and light graininess aroma. Low carbed for creamy mouthfeel and smooth drinking
